1 lb. ground lamb
2 tbsp. chopped fresh mint leaves
2 tbsp. chopped fresh cilantro
2 tbsp. chopped fresh oregano
1 tbsp. garlic, chopped
1 tsp. sherry
1 tsp. white wine vinegar
1 tsp. molasses
1 tsp. ground cumin
1/4 tsp. ground allspice
1/2 tsp. red pepper flakes
1/2 tsp. salt
1/2 tsp. ground black pepper
4 pita bread rounds
4 oz. feta cheese, crumbled

Preheat grill for medium heat.

Mix all ingredients in a large bowl. If you are grinding the lamb, grind with seasonings.

Shape into 4 patties.

Grill burgers 5 minutes on each side or until done.

Heat pita (or naan) briefly on grill.

Wrap burgers in pita and top with feta cheese.

We served with open-faced on naan with tomato chutney.

Wonderful recipe. I don't recall having lamb growing up, but I sure loved the gyros at that place in Twelve Points. These burgers capture that middle eastern flavor. Fresh ingredients make it great.
