1-1/2 cups flour
1 cup sugar
1 tsp. baking powder
1 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. salt
2/3 cup oil
1 cup shredded carrots
1/2 cup crushed pineapple (with syrup)
1 tsp. vanilla

Icing:
3 oz. cream cheese
4 tbsp. butter
2 tsp. vanilla
2-1/2 powdered sugar
dash of salt
1/2 cup pecans (chopped)


Directions:
Directions:
Mix cake ingredients together thoroughly. Bake in 9 x 9 x 2” greased and floured cake pan 350º for 35 minutes. Cool. Mix icing put on cool cake and sprinkle chopped pecans on top.
