Peach Muffins Recipe

2¼ cups all-purpose flour
1 cup sugar
½ tsp. salt
1 Tbsp. baking powder
¾ tsp. cinnamon
¼ tsp. fresh grated nutmeg
½ cup vegetable oil
½ cup milk, or more, as needed
1½ tsp. vanilla
2 eggs
4 large or 6 medium ripe peaches, peeled, sliced and chopped
4 Tbsp. brown sugar for garnish

Directions:

In a large bowl, combine flour, sugar, salt, baking powder, cinnamon and nutmeg. Stir well. In a 2-cup measuring cup, measure oil, milk, vanilla. Beat in eggs.

Remove about 1/2 cup of the dry ingredients and sprinkle over the chopped peaches. Toss lightly. (This will help prevent the fruit from sinking to the bottom of the muffins.)

Stir liquid ingredients into the bowl of dry ingredients just until combined. Gently stir in chopped peaches. (Add more milk if peaches are not very ripe and batter seems dry.)

Grease a 12-cup muffin pan and fill with batter, using about 1/4 cup per muffin. Sprinkle brown sugar with your fingers on top of each muffin.

Bake in a preheated 400-degree oven for 15-20 minutes or until done.

Makes about 12 muffins, depending on size of pan.

The best peaches for this recipe are the kind that are too ripe for anything else. Sweet and drippy/juicy is perfect for these muffins!
