1 cup vegetable oil;
2 eggs;
3 cups chopped apple (granny smith works well);
2 cups sugar;
2-1/2 cups flour;
1 tsp baking soda;
1 tsp baking powder;
1 tsp salt;
1 tsp cinnamon;
1 bag of butterscotch baking chips

Directions:
Directions:
Mix oil, eggs, sugar. add chopped apples. Mix well. Add dry ingredients.
Spread into ungreased 9 x 13" baking pan. Sprinkle butterscotch chips over batter. Make sure to spread evenly across pan. Bake in preheated 350 degree oven for 50 - 60 min.

The first time I went home with my Penn State roommate, Joyce Gannon, to Pittsburgh, the whole family came to meet the girl from Chicago. I made an impression by eating about 1/2 of this delicious cake! They also liked my accent.
