3 corn tortillas (cut into small squares)
3 -4 eggs (scramble in a cup or bowl)
2 Tbsp butter
Salt & pepper, to taste

Melt butter in a skillet over medium heat. Add the corn tortillas & stir until just getting crisp. Pour the scrambled eggs over the tortillas & continue cooking until the eggs are cooked. Salt & pepper to taste.

This is a very basic recipe. It is one of my favorites because I don't like eating eggs without some sort of bread. And you normally wouldn't be able to feed 2 - 3 people with so few ingredients. Try it with a little salsa on top.
