1 medium shollot or (fruit, etc to flavor)
1/2 c shallot, minced
1/2 c red wine vinegar or (vinegar of choice)
3-5 Tbls EVOO or Bacon Drippings
1 1/2 c packed brown sugar
3/4 teas Dijon mustard
Kosher or Sea salt and freshly ground pepper to taste
3/4 c toasted pecans, chopped

For Nancy's Bacon Spinach Salad:
add 9 ounces diced fried chrisp and drained thick smoked bacon and save 3 Tbl of the rendered bacon fat to saute shallot until fragrant. Whisk in all ingredients remove from heat, toss with spinach, bacon,, nuts add the vinagerette toss to coat all and season with salt and pepper to taste. BEST TO SERVE IMMEDIATELY AS SPINACH DOSENT HOLD WELL WITH THE WARM DRESSING.
