6-8 thick cut Pork chops/steaks
1 med onion diced and saute'd until lightly carmamelized
2 cans drained sliced mushrooms
3 11oz cans cream of mushroom soup + 1 can water or broth

Optional:
1 1/2 c grated chedder or colby cheese to top and melt over chops while holding in oven after cooking.

Gravy: add cornstarch slurry to thicken drippings and liquid in crock after chops are removed
Sauce: reduce the drippings and liquid in crock by cooking on high until reduced by 1/4-1/2, add 1/2 c butter and 1/2 c heavy cream

Serve over choice of steamed rice - mashed potatoes- noodles

In a large skillet brown chops and place in a large crock pot layering chops, onion, mushrooms, soup. Pour the last can of soup mixed with can water over all. Turn crock pot on high to heat for 30 minutes to start cooking, then reduce to low when. Continue cooking on for 1-2 hours or to until all chops internal temp is 160 degree F. Turn crock pot on high and Pre-heat oven on warm and remove chops placing them in an oven proof pan. Cover chops loosely with foil to hold heat and keep from drying out unttil ready to serve. Skim off excess fat and add a cornstarch/water slurry when liquid begins to simmer rapidly whisking constantly and allow for thickening between additions of slurry. For a rich velvety smooth more classic "suace" simmer liquid in crock on high as with gravy except when liquid reduces to approx half add unsalted butter and heavy cream. Stirring constantly allow to simmer just until sauce is a velvety smooth consistncy that coats a metal dinner spoon. (See gravy and sauce recipes in index for more hints on sauce and gravy making.

I adjust this recipe to fit the situation. If I am feeding people with special requests for low fat I make the sauce using a broth to cook in and add non-fat milk to make sauce or gravy and yolk fee egg noodles or brown rice. It is definitely a comfort food dish.
