Ingredients: 10 large eggs 1/2 cup 2% milk 1/2 teaspoon kosher salt 1/4 teaspoon Tabasco or worcestire sauce Freshly ground black pepper Mix-ins: Broccoli (2 cups) and goat cheese (1/2 cup) Arugula (2 cups rough chopped) , bacon (6 slices chopped) and mozzarella (1/2 cup shredded) Spinach (2 cups rough chopped ), tomato ( 2 medium chopped) and sausage (1 cup ground)

Directions:Preheat oven to 425 and coat 12 cup muffin pan with non-stick spray. In large bowl whisk together eggs, milk, salt, sauce and pepper. Choose mix ins and stir in 2/3 to egg mixture. Divide among muffin cups evenly. Top with remaining mix ins. Bake until just set for approximately 12 minutes. Cool for 2 mins and remove from pan. Serve immediately or freeze and reheat for 60 seconds at medium heat. Also good cold. |
