1 bag of broccoli slaw
1 green onion, sliced
1 package Ramen noodles (Oriental flavor works best, but any will do)
1/4 c. vegetable oil
1/3 c. apple cider vinegar
1/2 c. sugar
2 T soy sauce
1/2 c. slivered almonds (optional)
1/4 c. dried cranberries (optional)

Directions:
If using almonds, toast them first on the stove top or on a sheet pan in a 350º oven for approximately 5 minutes, shaking pan frequently. Set aside to cool while preparing the rest of the salad.

Dressing: Whisk together vegetable oil, vinegar, and sugar. Add the ramen seasoning packet and approximately 2 T soy sauce, to taste. Reserve the ramen noodles for the salad.

Salad: In a large bowl, combine broccoli slaw, green onion, and almonds/cranberries (if using).

Pour dressing over salad and toss well to coat salad thoroughly. Roughly crunch the raw ramen noodles, and toss with the rest of the salad just before serving (this keeps them from getting soggy).

Toasted sesame seed would also make a tasty addition to this salad.

I first got this recipe from a friend in Arizona, and I have made my own adjustments over the years. Any time I'm asked to bring a dish to an event, I bring this Asian broccoli slaw, and nine times out of ten, someone asks me for the recipe. Delish!
