1/2 c. uncooked long-grain rice
4 c. milk, divided
1/4 c. butter, cubed
3 eggs
3/4 c. sugar
1 tsp. vanilla
1/4 tsp. salt
1/2 tsp. ground nutmeg

Directions:
In a large, double boiler pan, combine rice and 2 c milk. Cook over medium heat, stirring occasionally, until rice is tender and most of the milk has been absorbed, about 40 minutes. Stir in butter.

In a large mixing bowl, beat eggs. Blend in the sugar, vanilla, salt, and remaining milk. Stir into the hot rice mixture.

Pour into a lightly greased 2-qt baking dish and sprinkle with nutmeg. Bake @ 350º for 50 minutes or until firm.
