1 bag lentils
1 medium onion, chopped fine
6 cups water
1 can tomatoes
2 - 3 carrots, diced
1 - 2 potatoes, diced
1 teaspoon oregano
1/2 teaspoon sage
1/2 teaspoon basil
2 teaspoons garam masala, optional
Salt and pepper, to taste

Directions:

Wash lentils and pick out any stones.

Saute onion in oil in Dutch oven until translucent. Add all the rest of the ingredients. Bring to a boil, then turn heat down to a simmer. Simmer for about an hour or until vegetables are cooked.

Serve in bowls.

This is a favorite soup of ours. I once wondered what it would taste like with some garam masala since we love Indian food, and we liked it so much, I seldom make it without the garam masala. If you like the Indian spice, taste and adjust to your liking.
