PIE FILLING
1 c. sugar
1 c. boiling water
juice of one lemon
1/2 tsp. grated lemon rind
3 T. flour
3 egg yolks
2 T. butter
pinch of salt
a little water [not the boiling water]
MERINGUE
3 egg whites
4 T. sugar

DIRECTIONS FOR FILLING
1. Put sugar in boiling water and let boil until sugar is dissolved
2. Mix all dry ingredients with pinch of salt and a little water
3. Add well beaten egg yolk and lemon juice
4. Add the above egg mixture to the boiling water mixture and cook until it is thick
5. Cool before placing into a pastry shell
DIRECTIONS FOR MERINGUE
1. Beat egg whites until stiff
2. Add sugar gradually
3. Spread on pie after filling has cooled
4. Put pie into oven to brown slightly and then remove from oven

This recipe came from Debbie Klein Wanderscheid and she found it in a very old cookbook because the entry was listed as Ann Goergen. Ann was married in 1945. The recipe does not give a temperature for the pastry shell. Pastry shell recipe was not included in the old cookbook. Possibly only a cookstove with no temperature guage was used.
