3/4 lb butter, softened
3 cups sugar
5 eggs
3 cups flour
2 Tbsp lemon extract
3/4 cup 7-Up

Directions:
Directions:
Preheat oven 325º.
Cream butter and sugar together for 20 minutes. THIS IS NOT A TYPO. I really mean to cream/beat for twenty minutes.
Add eggs, one at a time, beating after each addition. Add flour and lemon extract. Fold in 7-Up. Pour into a well-greased 12-cup Bundt or tube pan.
Bake 1 to 1 1/4 hours.

Optional lemon glaze:
Mix 2/3 cup powdered sugar with 1 Tbsp lemon juice. Drizzle over cooled cake.
