10 oz. ground pork
6 oz. whole grain linguine pasta
3 oz. cherry tomatoes halved
3 cloves garlic minced
1 carrot peeled and diced
1 stalk celery diced
1 yellow onion diced
1 bunch parsley finely chopped
2 tbsp tomato paste
1 c water
salt and pepper to taste

1/4 grated Parmesan Cheese

Heat a large pot of salted water and bring to a boil
In a large skillet, heat 2 tsp olive oil until hot. Add the ground pork; season with salt and pepper. Cook, frequently breaking the meat apart, 4 to 6 minutes or until browned and cooked through. Transfer to a bowl, leaving any drippings in the pan.
Add the garlic, carrot, onion and celery to the pan. If the pan seems dry, add more olive oil. Cook, stirring occasionally 4 to 6 minutes or until soft and fragrant.
Add the tomato paste to the pan of veggies. Cook, stirring frequently, 1 to 2 minutes or until dark red. Add the cooked pork and 1 c water. Cook, stirring occasionally 4 to 6 minutes or until thickened and saucy.
While the sauce cooks, add the pasta to the pot of boiling water. Cook 4 to 6 minutes, or until just shy of al dente. Reserving 1/2 c of pasta water, drain the pasta thoroughly.
To the pan of sauce, add the cooked pasta, cherry tomatoes and all but a pinch of Parnesean cheese and 1/4 c pasta water, season with salt and pepper. Cook stiring frequently to coat the pasta, 1 to 3 minutes, or until thoroughly combined. (If the sauce seems dry, gradually add the remaining pasta cooking water. Remove from heat. Divide the finished pasta between two dishes. Garnish with the parsley and remaining Parmesan cheese.
