2 c. liquid (broth, water, milk)
To every 2 c. liquid add 3 large eggs
Soy sauce
Green onions or scallions, or, ham, or cha siu, finely chopped
Sesame oil

Directions:
Directions:
Blend eggs evenly without beating.
Use liquid at room temperature.
Season liquid and egg mixture with salt to taste.
Pour into a shallow glass pie plate through a strainer (to eliminate air). Seal tightly with saran wrap, (do not poke holes into the wrap).
Boil water in a steamer and then place egg dish into the steamer, reducing heat to medium so that eggs steam gently. Steam for 12 minutes.
Test for done-ness with a knife. When it comes out clean, it is done. If the knife comes out coated, continue steaming another 5 minutes.
After it is steamed, top with 1 tsp. soy sauce, and other toppings you desire. Steam for another 2 minutes.
Remove from heat and drizzle with sesame oil.

Sesame oil is volatile so the rule is to remove your dish from heat before adding it.
