Ingredients:
Ingredients:
potatoes 4 medium -large
canola oil-1/2tbsp
onion-1 medium-large
butter-2 tbsp
salt 1/4 tsp (add more to suit your taste)
pepper- dash
garlic powder- dash (add more to suit your taste)
optional: milk-2 tbs

Directions:
Directions:
1. Peel and cut the potatoes into 1/4's. If large cut into 1/6th's
2. Place in a pot filled with cold water
3. Boil the potatoes for approximately 25 minutes. The potatoes are ready when they are tender enough for a fork to easily go into the flesh. If the potatoes are too hard or too mushy your final dish will not be very good. Experiment with the exact time for your stove.
4. While the potatoes are cooking, dice the onion and heat the oil in a small fry pan then add the diced onion. Fry until the onions are a golden brown..
5. Drain the potatoes and place in a mixing bowl
6. Add the butter, browned onions, salt, garlic powder and pepper. Mix through well then mash the potatoes. You can add the milk for a smoother consistency if you so desire.
7.Add additional amounts of the spices to suit your own taste.

Another Miriam recipe that we enjoyed. She told me that the goal was to make the potatoes taste like the inside of a potato Knish.
