1 c. unsalted butter, softened at room temperature
1/2 c. sugar (yellow sugar is ok too)
2 c. a-p unbleached flour (add more if nedded, 1 Tbsp at a time)
2 c. ground unblanched almonds
1 tsp almond extract, or, vanilla extract
3/4 tsp salt

Cream butter and sugar 2 minutes; add vanilla or almond extract and salt; beat another minute

Add flour and mix well

Add ground almonds

The dough should be stiff working away from sides of bowl.

You may add more flour 1 Tbsp. at a time until dough does not feel greasy.

Chill dough for 1 - 2 hours.
Pinch off walnut size dough and shape.

I made a mold and sliced the pieces, rechilled before baking at 350º for 15 - 20 minutes.

Uncle Chuck made a wooden form that is good for one recipe approximately 35 cm x 6.5 cm Or, you can roll it using a bamboo mat.
