1 Head Romaine Lettuce - large
1/4C Olive Oil
Dressing:
4 Garlic Cloves
2 Eggs - large - cooked for 1 minute
3T Lemon Juice - freshly squeezed
1/2t Salt
1C Croutons
1/2C Parmesan Cheese

Directions:
Directions:
1. Trim the lettuce - remove rough outer leaves. Do NOT cut the tip or end of the lettuce off. Cut the head into 4 pieces - leaving the stem on the end to hold the leaves together.
2. Prepare the dressing. Place the garlic, lemon juice, salt and cooked warm eggs in blender. Turn the blender on high and pour in the 3/4C olive oil in a slow, thin drizzle. The dressing should thicken as you pour the oil into the blender. Refrigerate the dressing.
3. Grill the lettuce. Place the 4 romaine pieces on a hot grill. Pour the oil over the lettuce - you want to try to make the grill flame up and scorch the lettuce.
4. Flip the lettuce on the grill trying to get blackened grill marks on the lettuce. You are not trying to cook the lettuce - just trying to get a "grill" taste on the lettuce.
5. Place the grilled romaine on individual salad plates, pour the dressing over, add croutons and Parmesan cheese.

You may wish to make your own croutons or create a Parmesan square for a more attractive way to serve this. The dressing and this entire recipe has received solid praise from those partaking.
