1 tbsp. oil or butter
½ lb. lamb
4 carrots, chopped
4 medium red potatoes
1 medium onion
1 medium apple
2 c. coconut milk
2 tsp. curry powder
1 c. quinoa
½ c. raisins
mango chutney for topping

Directions:
Directions:
Mix coconut milk and curry powder in a cup and set aside. Heat pot and add oil or butter, then braise lamb. Add carrots, onion and apple. Pour curry milk over the top of mixture in pot. Using a spoon, make a hole in the center of the mixture in pot. Pour in uncooked quinoa. Sprinkle raisins over the whole mixture. Secure the lid, bring cooker to pressure, reduce heat and cook for 30 minutes. Release pressure while it is hot. Serve with a spoonful of mango chutney.

We have found several great recipes to be able to reduce the amount of cook time on the boat. If you have been to the Caribbean you will find curry everywhere. Families have their own curry they have made and used for years. Each island also has its own spin on curry.
