2 1/2 c sifted all purpose flour
1 tsp double acting baking powder
1 tsp salt
1 egg
2 tsp vanilla
3/4 c sugar
2/3 c olive oil
2 tbsp. water
uncooked icing
red cinnamon candies
shredded coconut
green sugar

Sift together flour, baking powder and salt. Beat egg and vanilla in a mixing bowl and add sugar slowly beating to mix well. Add oil, a little at a time, alternately with water beating until smooth. Add half the flour mixture and beat until smooth. Stir in remaining flour mixture. Chill well so that dough handles easily. Turn dough out on a lightly floured board. Knead lightly about 5 turns or until smooth. Roll out half the dough at a time about 1/8" thick. Cut with a floured Santa cookie cutter. Place 1" apart on greased baking sheets. Bake in a moderate oven 350ºF 10 min or until golden brown. Remove from pans. Cool on a rack. Decorate with icing, candies, coconut and sugar.

Uncooked Icing: Measure 2 c sifted icing sugar into a bowl. Stir in 1 1/2 tsp vanilla and 2 tbsp. water or enough to make an icing which spreads easily. Leave half the icing white and tint remainder with a few drops of red food coloring.
