2/3 c firmly packed brown sugar
1 tbsp. flour
3/4 tsp salt
1 1/2 tsp pumpkin pie spice
1 tbsp. olive oil
2 eggs slightly beaten
1 1/4 c milk
1 pastry shell
2 c sweetened whipped cream
chopped nuts

Directions:
Directions:
Set oven to 425ºF. Combine first 4 ingredients in a large bowl. Add pumpkin, oil, eggs and milk and blend well. Pour into pastry pie shell. Bake 30 min or until a knife inserted near edge comes out clean. Cool and top with cream and garnish with chopped nuts.
