2 c sifted all purpose flour
2 tsp double action baking powder
1/2 tsp salt
1/2 tsp cinnamon
1/2 tsp nutmeg
2 eggs beaten
1/2 c sugar
olive oil
1/4 c apple juice

Directions:
Directions:
Sift together flour, baking powder, salt and spices. Combine eggs, sugar, 2 tbsp. of oil and apple juice in a large bowl. Beat well. Stir in flour mixture slowly mixing thoroughly. Chill dough until it will handle easily. Meanwhile pour oil to a depth of 3 inches into a deep kettle and heat to 375ºF on a deep fat thermometer. Roll or pat out chilled dough on a lightly floured board or pastry cloth to 1/4" thickness. cut with a floured 2 1/2" doughnut cutter. Fry 2 to 3 min in the hot oil turning doughnuts when they rise to the surface. Drain well on absorbent peper. Serve plain or coated with sifted icing sugar.
