1/2 cup margarine, softened
1 cup sugar
2 eggs
2 ripe bananas, mashed
2 cups flour
1 teaspoon salt
1 teaspoon baking powder
1/2 teaspoon baking soda
1 cup buttermilk
1/2 cup pecans, chopped
1 teaspoon vanilla

Directions:
Directions:
Preheat oven to 400º.
Beat together margarine and sugar at medium speed until light and fluffy, add eggs one at a time, beating well after each addition. Beat in bananas until smooth. Mix together flour, salt, baking powder and soda. Alternately stir flour and buttermilk into egg mixture until dry ingredients are just moistened. Stir in nuts and vanilla. Do not over mix batter, it should not be completely smooth. Spoon batter into greased muffin tin or use paper lines, bake for 15 to 18 minutes or until lightly browned.
