2 Lbs Rice, uncooked
1 ¾ Qt Water
1 Tbsp Oil
4 Oz Onion Finely diced
2 Oz Garlic Finely minced
8 Oz Carrot Fine diced
8 Oz Frozen peas Thawed
4 Oz Cooked egg, scrambled Diced
1 Cup Classic stir fry sauce
¼ Cup Scallion Thinly sliced

1. Steam rice, covered, until all water is absorbed.
2. Heat oil in large sauté pan or wok over medium-high. Add onion and sauté 4
minutes or until fragrant. Add garlic, carrot and peas. Sauté 5 minutes or until
tender. Add cooked, diced egg, rice and stir fry sauce. Toss to coat.
3. Hold hot for service at > 140°. Garnish with sliced scallions.
