⅔ c sugar
¼ c shortening
¼ t salt
1 t vanilla
1 egg
1½ c flour
½ c milk
2 t baking powder

Directions:
Directions:
Cream shortening and sugar. Add unbeaten egg. Add flavoring. Beat thoroughly. Sift flour, measure, and sift with salt and baking powder. Add alternately with milk to creamed shortening and sugar. Pour into well-oiled loaf pan. Bake in moderate oven (375° F.) 35 minutes - The Household Searchlight.

This basic recipe may be used for tea cakes or short cakes.

This recipe comes from the Household Searchlight Recipe Book. Topeka, Kansas: The Household Magazine, 1940. On page 54 of the cake section is the basic "One-Egg Cake" recipe followed by nine variations. A couple of those variations are included in this cook book. Based on the pencil marks and food stains Marian used this recipe. The picture above is not Marian's copy. Her cook book shows more wear and tear.
