Ingredients: 3 envelopes dream whip
1 #2 can crushed pineapple (20 ozs.)
juice of 1 lemon
1 cup white sugar
1 cup boiling water
1 large angel food cake
2 Tbsp. unflavored gelatin
4 Tbsp. cold water
1 box shredded coconut
maraschino cherries (optional)

Directions: |
Directions:Soften gelatin in cold water, add boiling water and stir until dissolved. Add sugar, lemon juice & pineapple including juice. Chill until partially firm. Whip 2 enveloped dream whip according to directions on package.
Fold into gelatin mixture. Line 9X13X2 inch pan with waxed paper. Cut cake into small pieces. Alternate layers of cake and gelatin mixture in pan until all is used. Chill overnight.
Next morning prepare third box of dream whip and spread over top of cake. Sprinkle with coconut and garnish with cherries. Refrigerate until served. |

Notes: I got this recipe from my neighbor Mitzi Burgher when I lived in Roanoke, VA. This cake is so light and refreshing and it makes a great summer cake. Most grocery stores sell angel food cakes so you can use one of those to make a quick and easy dessert.
