Basic: 15 oz. can garbanzo beans- drain and rinse
juice of 1 or 2 lemons
2 tbsp. extra virgin olive oil
salt to taste


Sesame Butter : 2-4 tbsp. sesame butter/paste
1-2 tbsp. extra virgin olive oil

Variations on Hummus:
chopped canned pimento pepper
chopped Anaheim pepper
chopped green onion
chopped pistachios(traditional)
toasted pine nuts(traditional)
chopped walnuts
chopped pecans
chopped parsley
chopped mint
a dash of one or more of the following: cumin,cayenne,coarse salt, lemon zest

Blend or process beans,lemon juice, olive oil to a smooth paste. ( the smoothest paste is achieved by rubbing the drained beans between cloths or paper towels and removing the bean husk). Add salt to taste. Serve with triangles of pita bread and or favorite crackers.

Sesame butter paste-Blend the sesame paste or tahini into basic hummus. Spread the hummus on a salad plate. Make a shallow reservoir in the middle of the hummus. Pour 1-2 tbsp. olive oil into it. Serve with pita triangles (toasted is best!) and /or favorite crackers.
