1 pkg( 2x150g) of flavored dessert tofu
1 cake mix
1/4 cup of cold water

We usually use Peach flavored tofu and a white or vanilla cake mix because it is a favorite and easy to find but you can mix and match different ones as you please and add things like craisins, nuts, or coconut to create some variety.

Directions:
Directions:
Place all ingredients into a bowl and mix well until batter is smooth.
Spoon into muffin tins with cupcake papers in them.
Bake at 350º for 20-25 minutes or until middle bounces back.
Watching carefully that the bottoms don't burn because the tofu replaces the fat.
Remove from tins and let cool.
Enjoy!

These are so moist and yummy, our kids have loved taking them to school as a treat to share and especially enjoyed the part where they get to tell the other kids that they just ate tofu after they have said how much they like them.
