CAKE: 2 1/4 Cups Flour 1 1/2 Cups Sugar
2 tsp Baking Soda 1 tsp Salt
2 - 3 Tblsp Cocoa 2 Cups Cream
2 Eggs 1 tsp Vanilla

FROSTING: 2 Cups Sugar 4 Tblsp Flour
1 1/2 Cups Evaporated Milk 1 Cup Butter
1 1/2 Cups Coconut 1 Cup Pecans (chopped)

CAKE: Sift dry ingredients together and add the cream, eggs, and vanilla, blending with a hand mixer on medium setting for two to three minutes. Pour into a 9" by 13" cake pan coated with cooking spray and lightly dusted with flour. Bake 25 to 30 minutes at 350 degrees. Makes two 9" round layer cake pans. Cool.

FROSTING: Combine sugar, flour, butter, and milk in heavy saucepan. Cook on medium-high heat until thick, stirring constantly. Add coconut and nuts, stirring for a couple more minutes. Remove from heat and cool to room temperature before icing cake.

This was a regular dessert at home, growing up, using home separated cream. There was always a fresh supply of cream from our milk cows.
