2 cups artichoke hearts quartered
2 cups plum tomato cored and diced
2 cups broccoli spear
1 cup broccoli rabe or broccoli
2 cup fennel sliced
6 fluid ounces Shallot Vinaigrette

Combine cooked lentils, artichoke, tomatoes, broccoli, broccoli rabe, and fennel. Toss with vinaigrette just
before service.
NOTES: Quik Pik Portion: 2 oz lettuce bed, 10 oz of salad
