½ cup red onion diced
1 cup jicama julienned
1/3 cup hearts of palm sliced
2 whole mango diced
2 whole avocado diced
1 pound salmon fillet 4 oz each (Can be made with shrimp)
12 ounces arugula
6 fluid ounces Cilantro Cumin Vinaigrette

Directions:
Directions:
Combine tomato, onion, jicima, heart of palm, mango, avocado, and roasted salmon. Toss with vinaigrette and
serve over arugula. Prepare just prior to service to ensure freshness.
NOTES: Quik Pik Portion: 1 oz greens with 9 oz salad
