2 fluid ounces fresh lime juice
1½ tablespoons light soy sauce
3 teaspoons sugar
4 fluid ounces rice wine vinegar
1 pinch salt
1 pinch pepper
¼ cup fresh mint, chopped
½ cup peanuts, roasted,
chopped

Directions:

Combine all ingredients except for mint and
peanuts. Incorporate well.
Add peanuts and mint last.
