½ cup orange juice julienned
2 tablespoons lemon zest
2 tablespoons fresh mint
20 ounces spinach
10 ounces baby greens
3 each mandarin orange
10 ounces cherry tomatoes
10 ounces jicama julienned

Directions:

Marinate swordfish in orange juice, lemon zest, mint. olive oil, salt and pepper
Combine spinach, baby greens, mandarin oranges, cherry tomatoes and Jicama with dressing.
