2 lbs. hamburger
1 small onion
1 stalk celery
1-2 cloves garlic
2 tbsp. olive oil
salt and pepper to taste
1 small can tomato paste
2 large cans tomato sauce
1/2 c. salsa
1/2 c. beef broth
2 tsp. basil
1/2 tsp. oregano
2 tbsp. parsley
1 lbs. cheddar cheese, grated
1 lbs. mozzarella cheese, grated
1 c. parm cheese
1 small container cottage cheese plus 1 egg mixed (optional)
10-15 lasagna noodles (depends on pan size)

Bring large pot of water to boil for noodles.
In large skillet add 1 tbsp. oil, heat over medium heat. Add onion and celery, cook until tender. Add remaining oil, burger and garlic, salt and pepper to taste, brown. Once browned, add tomato paste, cook about 1 min. Add tomato sauce, salsa, broth and herbs, mix. Reduce heat to low. Add 1 tbsp. salt to boiling noodle water. Boil noodles 8-10 min, rinse with cold water. You may have to do more then one batch of noodles, they may not all fit at once, if this is the case allow water to come back up to boil before adding more noodles.
In sprayed baking dish (must have deep sides) add beef mixture to cover bottom well. Add layer of noodles, then layer each type of cheese. Now another layer of meat, ect. Last layer is cheese to cover. Most dishes you get 3-4 layers so it is about 1/4- 1/3 of each thing for each layer. Bake in oven at 350º for 45mins. to 1 hr., until top is golden and bubbly. ( You might need a cookie sheet lined with foil under just in case of boil over) Let cool about 10 mins. before serving.
