4 boneless, skinless chicken breasts, cubed into 1in. pieces
1 c. blackening spice
2 tbsp. olive oil
2 cloves garlic, grated small or minced
1/4 c. chicken broth
3 c. heavy cream
3/4 c. grated parm cheese
1 tsp. salt
1 tsp. pepper
1 lb. fettuccine, cooked al dente
1/2 c. scallions, sliced

Dredge chicken pieces in blackening spice. In large skillet, cook chicken thru over med heat, about 10 min. Remove chicken from pan, set aside. In clean skillet, over medium heat, add oil. Add garlic, lightly caramelize. Add chicken back to pan. Deglaze pan with chicken broth. Add heavy cream, heat to simmer, and reduce cream by half. When cream sauce is reduced, stir in parm, salt, pepper and pasta. Garnish with sliced scallions.
