2 lbs. hamburger
1/2 c. Italian bread crumbs
1/4 c. panko bread crumbs
1/4 c. parm cheese
2 eggs
1/4 c. milk
1 small onion, diced small
1 stalk celery, diced small
2 baby carrots, grated small
2 cloves garlic, grated small
salt and pepper to taste ( 1tsp. salt & 1/4 tsp. pepper)

For Gravy-
pan drippings plus olive oil to equal about 4tbsp. total
4 tbsp. flour
3 c. beef broth
salt and pepper to taste

In large skillet add 1 tbsp. butter, melt over med heat., Add onion and celery, cook until tender. Remove from pan onto paper towel to drain, set skillet aside. In large bowl mix burger with all ingredients including onion and celery. Once mixed well, form into 8 patties. Heat skillet back up to med, add 1-2 tsp. olive oil, cook patties apx. 2 mins. each side, place in 9x13 pan. Once patties are cooked, add oil if needed to make 4 tbsp., heat oil up, add flour and whisk together, cook about 1 min., add in beef broth, whisking the whole time. Cook and whisk until thickened, about 2 mins. Pour gravy over patties. Cover and bake at 350º for 45mins-1hr.
