1 bottle of a beer of your choice
3 russet potatoes (about 3/4 of a pound)
3 cloves garlic, minced
3 tbsp olive oil
salt
black pepper

Directions:
Directions:
1. Preheat oven to 425º
2. Scrub potatoes, and cut into matchsticks. leave the skins on.
3. In a large bowl, soak the cut fries, in 1 bottle of beer. Let soak for 15 minutes, tossing 1 to 2 times.
4. Drain beer and toss with olive oil, garlic, salt, and pepper, until well coated.
5. Line a large baking sheet with parchment and spread the fries, in a single layer on the pan. Use two pans, if needed. You don't want them stacked.
6. Bake for 40 minutes to an 1 hour, depending on how crispy you like them, tossing 3 to 4 times.
7. Add more salt and pepper to your liking.
