2 cups cooked chicken, shredded
3/4 cup onion, diced
3/4 cup celery, diced
1 small zucchini, sliced
1 cup carrots, diced
3 cloves garlic, minced
3 cups fresh spinach
1- 14.5 ounce can chopped tomatoes with basil, garlic & oregano variety
1 46 ounce can low sodium chicken broth
2 tablespoons fresh basil, chopped
2 tablespoons fresh oregano, chopped
salt & pepper to taste
10 ounces cooked tortellini
2 tablespoons olive oil
grated Parmesan cheese for garnish

Directions:
Directions:
1. Drizzle olive oil in a large pot on medium heat. Add celery, carrots, onions, and garlic. Saute for 4-5 minutes to develop flavor.
2. Add chopped tomatoes and chicken to the vegetables. Stir and bring to a low simmer. Cook for 30 minutes
3. Add fresh basil and oregano. Season with salt and pepper.
4. Fifteen minutes before serving, spinach, zucchini, chicken and tortellini. Continue to cook on a low simmer until ready to serve.
5. Ladle into a serving bowl and garnish with grated Parmesan cheese.
