1 dozen large eggs
1 cup milk and 1 cup half and half
8 ozs Sharp Cheddar cheese
8 ozs. Colby and Monterey Cheese. Can also use Swiss, sharp provolone or any combination of cheeses but should always use the Sharp cheddar as the main cheese.
1 box of any flavored seasoned croutons
1 bag frozen hash browns or O'Brien flavored hash browns
1 roll of breakfast sausage - the savory is best
1 lb bacon
1 teas salt and 1/2 teas pepper

Butter a deep large baking dish and set aside. Brown sausage, drain fat and set aside. Brown bacon, drain fat and crumble bacon and set aside. When removing sausage and bacon place on paper towels to "soak up" excess fat. Whisk eggs, milk. half and half, and salt and pepper together.
Grate cheeses. Spread hash browns on bottom and approximately 2 inches up the sides of the pan. Spread croutons on top of hash browns. Mix the sausage and bacon pieces together and spread half on top of the croutons. Mix cheeses together and spread half on top of the bacon and sausage. Repeat layers. Pour egg mixture over everything. Cover with foil and allow to sit in refrigerator over night or at least 8 hours.
In the morning take casserole out of refrigerator prior to baking and let sit approximately 15 minutes and preheat oven to 350. Bake uncovered for 45 minutes and casserole should be hot and bubbly. Stick a knife in the center to be certain eggs are set. If not continue to bake and check every 7 - 10 minutes until set. If you are using a cheese that is creamy when it melts, it may show on the knife.
