2 lbs. boneless pork
1 12oz can Coke (NOT diet)
1/4 c. brown sugar
dash garlic powder
1/4 c. water

Sauce:
1 c. Coke
1 can diced chiles
1 c. red enchilada sauce
1/2 c. brown sugar

Directions:
Directions:
Put ingredients together. Marinate a few hours or overnight. Put into crock pot and cook -- 4 hours on high; 8 on low. Drain liquid. Shred with forks when done. Process sauce ingredients in a blender. Pour over shredded pork. Cook 2 more hours. Great in tacos, salad, enchiladas, etc. Good with cilantro lime rice and Pico de Gallo.
