4 c. mashed sweet potatoes (abt 4 med potatoes, or 2 large cans)
6 TB sugar
6 TB butter, softened (DO NOT use margarine)
2 beaten eggs
1/2 can sweetened condensed milk
1 tsp. vanilla

Topping:
1 c. brown sugar
1 1/2 c. coconut flakes
6 TB butter

Directions:
Directions:
Cook sweet potatoes until tender. Slice in half and put in mixing bowl. Add sugar, butter, eggs, milk, and vanilla. Mix well, but leave chunky. Spread in 9x13" pan. Mix the topping by combining the brown sugar and coconut; then pour butter over the mixture. Spread the topping on top of the sweet potatoes. Cook 40- 50 minutes at 350º. It is done when the top is bubbly and brown.
