Ingredients:  
1 lb. Flank, rump, or sirloin steak, cut against the grain of meat in slices 1" X 2" X 1/8" thick
In Bowl mix:
1 tbsp. Soy sauce
1 tsp. Sugar
¼ tsp. Salt
dash pepper
1 tbsp. Cornstarch
2 tbsp. Sherry wine
a few gratings fresh ginger
1 clove of garlic, minced
1 tbsp. Oil to coat meat
Soak beef in bowl. Let stand 15 min.

Mix: ( 3 ingred.)
½ c. Beef broth
1 tbsp. Soy sauce
1 tbsp. Cornstarch

2 tbsp. Oil for frying
2 c. Green pepper, sliced in strips 1" wide
½ c. Water chestnuts
1 small onion, halved, cut in strips 1/2" wide

Directions:
Directions:
Heat wok (or large fry pan) on high heat. Add oil, slosh around. Add peppers, water chestnuts, and onions. Toss-fry for 2 min. Remove to platter.
Clean wok (I just use a paper towel)- Heat on high heat. Add 1 Tbsp.oil. Slosh around. Add marinated beef. Keep toss-frying for about 3 min. Keep beef pinkish.
Add the cornstarch mix, toss-fry for about a minute.. mix will thicken (like gravy) and coat meat.. Add precooked vegetables. Stir and toss-fry until heated through about another minute.. Serve over rice or noodles.
