9" pie crust
4 cups rhubarb, cubed

3 eggs - beat with whisk
Add:
1 1/3 cups sugar
1 tablespoon flour
1 tablespoon corn starch
3/4 cup half & half or evaporated milk

Put the rhubarb on the crust, then pour the custard mixture over top. Bake at 375 degrees for 45 minutes.

My mom (Eloise Rubel) always makes this pie every spring when the rhubarb comes ripe. Everybody loves the combination of sweet custard and rhubarb!
