1 large bulbs of garlic
Olive Oil
Salt and pepper

Pre-heat oven to 400

Peel off excess skin from outside of garlic bulbs and cut the top flat so that the cloves are exposed.

Place bulbs in aluminum foil and coat with a generous amount of olive oil, salt and pepper.

Bring the corners of the foil up together and wrap the seasoned bulb so that it can sit upright in the oven.

Place wrapped/seasoned garlic bulb directly on the rack in the middle of the oven for 30 - 40 min or until you can smell the garlic.

Carefully remove from oven and let sit for 5 min.

Unwrap, place on serving tray with a small spoon and crackers!

the roasting of the garlic mellows it out and makes the cloves turn sweet and get a caramelization on it so that you can eat it straight on a cracker
