Spinach hamburgers Recipe

1 10 ounce bag fresh spinach
1lb lean ground beef
1 medium onion
1/2 cup bread crumbs
1 whole egg (or two egg whites)
1-2 tsp salt
a couple of shakes of pepper
a couple of shakes of garlic powder
1 8 oz can tomato sauce
1 can tomato paste
1/2 cup sugar (a little more or less depending on your taste
1 pinch sour salt (a little more or less depending on your taste). You can use lemon juice instead if you do not have sour salt.

1. de-stem the spinach the place spinach in boiling water for a few minutes.
2. drain spinach then squeeze out all the water. You can do this on a small cutting board placed near your sink.
3. Chop the spinach
4. Grate the onion
5. Place the chopped spinach, the grated onion and the ground beef into a mixing bowl and add the salt, pepper and garlic powder.
6. Thoroughly mix these ingredients together
7. Add the egg (or 2 egg whites) to the mixture and mix through
8. Add the bread crumbs and mix through. You may need to add additional bread crumbs if the mixture is not of a consistency thick enough to form patties. This will depend on the amount of moisture left in the spinach and the amount of moisture in the onion you used.
9. Form into 3 oz. patties
10. Fry patties 3 at a time in a small fry pan with a little bit of oil. When the patties are done transfer them to a plate
11. Put a little water in the fry pan and mix through with the drippings. Place the water and drippings into a pot (big enough to hold around ten patties)
12. Repeat steps 9 and 10 until all patties are cooked.
13. Add the tomato sauce, tomato paste, sugar and sour salt to the pot containing the drippings and stir well.
14. Add enough additional water so that all patties are covered. If the sauce gets too thin you can add additional tomato sauce.
15. Cover pot and simmer for 20 to 30 minutes.

Miriam didn't make this when Linda, Richard and I were growing up. She started making this after she moved to Montreal. We suspect that this was a favorite of the Bloom Brothers so she started making it then. I love to make this with a side dish of farfel as the mixture of farfel with the spinach hamburger sauce is really good!
