2 cups medjool dates
1 cup raw walnuts
1 cup raw almonds
2 scoops Chocolate Shakeology or other protein powder
1/2 tsp. All Natural Almond Extract
optional* 3/4 cup semi dark chocolate chips
unsweetened shredded coconut

Directions:
Directions:
1. Soak dates in water for at least a half hour.
2. Pulse nuts and Shakeology powder in a food processor until nuts are chopped up.
3. Remove dates from the water, pit them, and add them to the food processor.
4. Add almond extract & pulse until the “dough” sticks together when pinched. You want it tacky... not wet.
5. Add the chocolate chips (if using) and pulse to mix them evenly throughout the dough.
6. Roll about 2 Tbsp. size ball in your hands and then roll in shredded coconut.
7. Put in the fridge to firm up at least an hour. (although, no one will know if you try one with it's yummy cookie-dough like texture.)
8. Store in the fridge or freezer depending on how firm you like them.
