12 cups reduced sodium chicken or vegetable broth
1 – 1 ¼ pounds kale, deveined and broken into small pieces
4-5 carrots, peeled and sliced
1 pound bulk sausage
4 cloves of garlic, diced
1 onion, diced
2 T dried parsley
1 T Italian seasoning
2 tsp. pepper
1 ½ tsp. salt
¼ - ½ tsp. cayenne pepper
3 cans (15.5 ounces each) white beans – Great Northern or cannellini, drained and rinsed
1 can (15 ounces) diced tomatoes (optional)

Directions:
Directions:
Combine broth, kale, and carrots in a large stockpot. Bring to a boil.
While greens and carrots are cooking, brown the sausage with garlic and onions over medium-high heat. Drain if necessary.
Reduce heat of broth to medium, and stir in sausage mixture.
Add seasonings, beans, and diced tomatoes (if desired). Simmer for 20 minutes.
Garnish with parmesan cheese, if desired.
