3 eggs slightly beaten
2/3 c. flour
1 c. milk
1/2 tsp salt
Filling:
1 1/2 c. (6 oz) shredded sharp Cheddar cheese
3 Tbsp flour
3 eggs slightly beaten
2/3 c. mayonnaise
1 pkg (10 oz) frozen, chopped spinach, thawed, drained well
1 can (4 oz) mushrooms, drained
6 bacon slices, crisply cooked, crumbled
1/2 tsp salt
Dash pepper

Combine eggs, flour, milk and salt; beat until smooth. Let stand 30 minutes. For 12 crepes, pour 2 Tbsp batter into hot lightly greased 8 inch skillet. Cook on one side only, until underside is lightly browned. For filling, toss cheese with flour; add remaining ingredients and mix well. Fit crepes, cooked side down, into greased muffin pan; fill with cheese mixture. Bake at 350º, 40 minutes or until set. Garnish with bacon curls, if desired.
