• 12 ounces Trader Joe’s meatless ground “beef”
• 1 tablespoon dried parsley flakes
• 1 teaspoon Italian seasoning
• ½ cup fine dry bread crumbs, seasoned
• 1 teaspoon olive oil
• 1 cup finely chopped onions
• 1 cup grated carrots
• 1 cup finely chopped celery
• ½ cup ketchup + ½ cup ketchup
• 3 eggs (or ½ cup refrigerated egg substitute)

1. Preset the oven to 350 degrees. Generously spray a loaf pan with olive oil spray.
2. In a small saucepan, sauté the onions, carrots and celery in the olive oil till tender.
3. In a mixing bowl, combine the ground ‘beef’ with the eggs (or egg substitute), ½ cup ketchup, Italian seasoning and bread crumbs.
4. Add the sautéed vegetables to the egg mixture, mix thoroughly.
5. Generously spray the loaf pan with olive oil. Press mixture into the pan.
6. Pour the other ½ cup ketchup over the top. Cover with aluminum foil.
7. Bake at 350 degrees for 45 minutes; remove the aluminum foil and bake 15 minutes more or until set.
