3-5 lb roaster chicken
1 1/2 cup carrots
1 cup celery
1/2 onion
2 tbsp of tomato paste
1 box of chicken stock
salt & pepper
1 box pasta (tubittini, bowtie, acini pepe)

Directions:

clean chicken (inside and out)
place in crock pot fill to top with cold water.
add carrots, onions, celery, salt and pepper

cook on low for 5-7 hours.

When done, remove chicken (don't worry if it falls apart) place in separate bowl to cool for handling. Remove vegetables. (I rinse them off) strain broth into a pot. Place vegetables in broth, place pieces of chicken in broth add chicken stock. Heat on low, when simmering add tomato paste, stir it until broth turns an orange color. When boiling add pasta.

Skim the broth a few times. When pasta is cooked, serve!

* You don't have to use all the chicken. I usually make a chicken cacciatore with the breast meat.
